List of ingredients

  • 1.5 lbs chicken thighs (boneless, and skinless, about 8 chicken thighs)
  • ยฝ cup plain Greek yogurt (any fat percentage) – acts as a tenderizer
  • Juice of ยฝ a lemon – adds acidity and brightness
  • 3 tbsp olive oil – provides moisture and balances acids
  • 1.5 tsp salt – enhances all flavors
  • 3 cloves garlic (pressed) – for a pungent, savory base
  • ยฝ tsp black pepper – adds a subtle spicy warmth
  • 1 tsp ground cumin – provides earthy depth
  • 1 tsp paprika – adds color and a mild sweetness
  • 1 tsp onion powder – adds savory aromatic notes
  • ยผ tsp red pepper flakes – gives a hint of heat
  • 2 tbsp fresh parsley (finely chopped) – adds a fresh, herbal finish

step-by-step instructions

  1. Prepare the Dish: In a large 9×13โ€ baking dish, add the boneless, skinless chicken thighs.
  2. Apply Marinade: Top the chicken with Greek yogurt, lemon juice, olive oil, salt, garlic, pepper, cumin, paprika, onion powder, red pepper flakes, and parsley.
  3. Coat and Arrange: Mix well to ensure all the chicken is thoroughly coated; you may also use a large ziploc bag or a bowl for this step. Arrange the coated chicken in a single layer on the bottom of the dish, ensuring the pieces are not overlapping.
  4. Marinate: Cover the dish tightly with plastic wrap and place it in the fridge. Allow the chicken to marinate until you are ready to cook, ideally up to 12 hours, although even 5 minutes of marinating is beneficial.
  5. Bake: Preheat the oven to 450ยฐF. Remove the plastic wrap and bake the dish for about 25-30 minutes, or until the internal temperature reaches 165ยฐF.
  6. Broil and Rest: Switch the oven to broil for approximately 3 minutes to crisp the edges of the chicken. Remove from the oven and let the chicken rest for 5 minutes to lock in the juices.

Expert Preparation Tips

Optimize Marination Time

For the most robust flavor and the most tender texture, marinate the chicken for approximately 2 hours. This window allows the lactic acid in the yogurt and the citric acid in the lemon to break down muscle fibers effectively. While 5 minutes is acceptable, longer durations up to 12 hours maximize the penetration of the spices.

Utilize a Digital Meat Thermometer

Chicken thighs can vary in thickness, making it difficult to judge doneness by sight alone. Use a digital meat thermometer to ensure the thickest part of the thigh reaches exactly 165ยฐF. This prevents overcooking while ensuring the meat is safe for consumption.

Master the Broiling Stage

The final broiling step is essential for creating a caramelized exterior and crispy edges. Keep a close watch on the oven during these 3 minutes, as the yogurt can brown quickly. This step transforms the texture from simply baked to professional-grade roasted chicken.

Prepare Garlic Fresh

Using a garlic press on fresh cloves releases the essential oils and provides a more intense flavor than pre-minced jarred garlic. If you must use jarred garlic, ensure it is well-distributed throughout the yogurt mixture. Fresh garlic provides the signature pungent aroma associated with Mediterranean cuisine.

Avoid Overcrowding the Pan

Ensuring the chicken is in a single layer without overlapping is critical for even cooking. If the thighs are piled on top of each other, they will steam rather than roast, which prevents the edges from browning. Use a large enough dish to give each piece of meat sufficient space.

Ingredient Swaps and Modifications

Adjusting for Chicken Breasts

If using chicken breasts, start by tenderizing the meat with a mallet to ensure a uniform thickness across the entire piece. Follow the marinade instructions exactly as written for the thighs. Reduce the baking time to approximately 16-18 minutes to avoid drying out the leaner meat.

Substituting Dried Parsley

If fresh parsley is unavailable, you can use dried parsley as an alternative. Use 1 tablespoon of dried parsley to replace the 2 tablespoons of fresh herbs. Note that the flavor will be more muted, so you may want to add a pinch more black pepper for depth.

Selecting Yogurt Fat Content

Any fat percentage of Greek yogurt will work for this recipe, from non-fat to full-fat. Full-fat Greek yogurt is recommended for the best results because it has lower moisture content and provides a richer mouthfeel. Low-fat options may result in a slightly thinner marinade.

Modifying the Spice Level

The red pepper flakes provide a very mild heat that is suitable for most palates. If you prefer a spicier dish, increase the flakes to ยฝ or 1 teaspoon. For those who are highly sensitive to spice, these flakes can be omitted entirely without compromising the overall flavor profile.

Alternative Acidity Options

If you run out of lemon juice, apple cider vinegar can serve as a reasonable substitute. Use an equal amount of vinegar to maintain the acidity needed for tenderizing the meat. While the flavor profile will shift slightly, the texture of the chicken will remain tender.

Alternative Cooking Techniques

Grilling for a Smoky Finish

To cook this recipe on a grill, preheat your grill to medium-high heat. Place the marinated chicken thighs directly on the grates and cook for 6-8 minutes per side. This method adds a charred, smoky flavor that complements the tanginess of the Greek yogurt.

Air Fryer Instructions

Air frying is an excellent way to achieve a crispier exterior in a shorter amount of time. Place the marinated thighs in the air fryer basket, ensuring they are not stacked. Cook at 380ยฐF, shaking or flipping halfway through, until the internal temperature reaches 165ยฐF.

Stovetop to Oven Method

For an extra-sear, start by searing the marinated chicken in an oven-safe skillet over medium-high heat for 3 minutes per side. Transfer the skillet directly into the preheated oven at 450ยฐF to finish cooking. This ensures a deep golden-brown crust on both sides of the thigh.

Storage and Meal Prep Guide

Refrigerator Storage Limits

Once cooked, store the chicken thighs in an airtight container in the refrigerator. They will remain fresh and safe to eat for 3-4 days. To maintain the quality of the meat, avoid leaving the chicken at room temperature for more than two hours after cooking.

Freezing Raw Marinated Chicken

You can freeze the chicken while it is still in the marinade for long-term storage. Place the chicken and marinade in a heavy-duty ziploc bag and freeze for up to 3-4 months. Thaw the bag overnight in the refrigerator before proceeding with the oven instructions.

Freezing and Reheating Cooked Chicken

To freeze already cooked chicken, allow it to cool completely to room temperature before sealing it in an airtight container. These can be stored in the freezer for up to 3 months. To reheat, thaw overnight in the fridge and warm in a skillet over medium heat until heated through.

Batch Prepping for the Week

Preparing several batches of marinated chicken is a great way to streamline healthy eating. Store the marinated raw chicken in separate portions in freezer bags. This allows you to pull out only the amount needed for a single meal, reducing waste and prep time.

Serving and Pairing Ideas

Building Mediterranean Grain Bowls

Pair the chicken with a base of cooked quinoa or farro for a filling meal. Add diced cucumbers, cherry tomatoes, kalamata olives, and crumbled feta cheese. Top the bowl with a dollop of extra tzatziki or a drizzle of lemon-tahini dressing.

Fresh Salad Combinations

Slice the cooked chicken and place it atop a Mediterranean chopped salad. Use a mix of romaine lettuce, red onion, bell peppers, and parsley with a simple olive oil and red wine vinegar dressing. The warm chicken provides a great contrast to the chilled, crisp vegetables.

Starch and Vegetable Sides

Serve the chicken alongside cheesy smashed potatoes and roasted broccoli for a comforting dinner. Alternatively, a side of lemon-herb rice or roasted root vegetables works well. The residual yogurt sauce from the pan can be drizzled over the vegetables for extra flavor.

Sandwich and Wrap Applications

Use the chicken in a whole-wheat pita or a grilled wrap. Add sliced red onions, fresh spinach, and a slice of tomato. A layer of hummus or tzatziki sauce on the pita will complement the Greek flavors of the marinade perfectly.

Troubleshooting and FAQs

Can this marinated chicken be frozen?

Yes, it can be frozen both before and after cooking. If freezing raw, use a ziploc bag with the marinade for up to 3-4 months. If freezing cooked, use an airtight container and thaw in the refrigerator before reheating in a skillet.

Why don’t you recommend marinating overnight?

While shorter marination is fine, the optimal limit for chicken thighs with this specific marinade is 12 hours. Because the marinade is very moist, leaving it overnight can cause the chicken to become too saucy and lose some of its structural integrity.

What can I serve with this Greek chicken?

This chicken pairs exceptionally well with Mediterranean staples. Recommended sides include crispy roasted potatoes, quinoa salads, or a fresh Greek salad with feta and olives. It also works well in grain bowls or as a filling for pita wraps.

Why is there liquid at the bottom of the pan?

It is completely normal to see liquid at the bottom of the pan after cooking. This is a combination of the yogurt moisture and the natural juices released by the chicken thighs. This liquid is flavorful and can be used as a light sauce for the meat.

What to do if the yogurt browns too quickly?

If the yogurt marinade begins to char too rapidly during the broiling phase, reduce the time or move the oven rack to a lower position. The goal is a golden-brown color, not a burnt surface. Monitor the chicken closely during the final few minutes of cooking.

  • 1.5 tsp salt
  • 3 cloves garlic (pressed)
  • ยฝ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • ยผ tsp red pepper flakes
  • 2 tbsp fresh parsley (finely chopped)

Instructions

  1. Step 1: In a large 9×13โ€ baking dish, add chicken thighs.
  2. Step 2: Top with greek yogurt, lemon juice, olive oil, salt, garlic, pepper, cumin, paprika, onion powder, red pepper flakes and parsley.
  3. Step 3: Mix well to coat all the chicken (this step can also be done in a large ziploc bag or a bowl if you prefer).
