- 2 medium yellow onions, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil, divided
- 2 tablespoons balsamic vinegar
- 1 teaspoon light brown sugar
- 1 teaspoon dried thyme, divided
- 0.5 teaspoon turmeric powder
- 2 tablespoons nutritional yeast
- 0.5 teaspoon fine sea salt, or to taste
- 0.25 teaspoon freshly ground black pepper, or to taste
- 2 tablespoons fresh thyme leaves, for garnish
Instructions
- Prepare Caramelized Onions: Heat 1 tablespoon olive oil in a large non-stick skillet over medium-low heat. Add sliced onions and cook for 20-25 minutes until deeply golden brown and soft. Stir in balsamic vinegar, brown sugar, and 0.5 teaspoon dried thyme. Cook for 3-5 minutes more, allowing liquid to reduce and create a glossy coating. Remove from heat and set aside, reserving 2 tablespoons for garnish.
- Saute Aromatics: In the same skillet (or a separate one), heat the remaining 1 tablespoon olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Cook Tofu Base: Add crumbled, pressed tofu to the skillet and cook for 5-7 minutes, stirring occasionally. This allows excess moisture to evaporate and helps the tofu develop slight golden edges.
- Season Scramble: Stir in turmeric powder, nutritional yeast, remaining 0.5 teaspoon dried thyme, salt, and black pepper. Continue to cook for 2-3 minutes, ensuring spices are evenly distributed and the tofu is coated in a vibrant yellow color.
- Fold in Onion Swirl: Gently fold most of the prepared Balsamic Caramelized Onion Swirl into the tofu scramble, leaving distinct ribbons and streaks throughout. Avoid overmixing.
- Garnish and Serve: Remove the scramble from heat and transfer immediately to plates. Drizzle the reserved Balsamic Caramelized Onion Swirl over the top and scatter with fresh thyme leaves. Serve immediately.
Notes
Pressing extra-firm tofu removes excess water and prevents a mushy texture. Serve immediately alongside crusty bread or roasted potatoes. Avoid overmixing the onions into the scramble to maintain distinct ribbons for visual appeal.
