Description

Tender, flavorful chicken legs baked to perfection and bursting with savory seasoning.


Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons Adobo all-purpose seasoning
  • 1 1/2 teaspoons Italian seasoning
  • 1 1/2 teaspoons smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 8 chicken legs
  • 1/2 tablespoon unsalted butter
  • 1/2 yellow onion, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1/2 cup chicken broth
  • 1 tablespoon all-purpose flour

Instructions

  1. Step: Preheat oven to 375ยฐF (190ยฐC).
  2. Step: In a small bowl, combine olive oil, Adobo seasoning, Italian seasoning, smoked paprika, onion powder, salt, and pepper. Mix well.
  3. Step: Pat chicken legs dry and remove any excess fat. Place in a large bowl and rub seasoning mixture evenly over each drumstick.
  4. Step: Coat the bottom of a 9×13-inch baking dish with butter. Arrange seasoned chicken legs in the dish and scatter sliced onion and bell pepper around them.
  5. Step: In a small bowl, whisk together chicken broth and flour until smooth. Pour the mixture into the bottom of the baking dish around the chicken, not over the top.
  6. Step: Cover baking dish with aluminum foil and bake for 45 minutes.
  7. Step: Remove foil carefully, baste chicken with broth, and bake uncovered for an additional 30 minutes until golden and cooked through.
  8. Step: Optional: Baste chicken one more time with broth before serving.
