Instructions

  1. Marinate & Cook the Chicken: In a bowl, combine lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper, then coat chicken thighs and marinate for 15-30 minutes before cooking in a large skillet over medium-high heat for 8-10 minutes per side.
  2. Prepare the Street Corn Topping: In a large bowl, mix together grilled corn, red onion, sour cream, mayonnaise, and Cotija cheese, then stir in chili powder, salt, black pepper, and fresh lime juice.
  3. Prepare the Rice: Reheat cooked Jasmine rice with a splash of water in the microwave to keep it fluffy.
