  • 150 g (5.3 oz) Cheddar Cheese, Grated

  • 2 Cloves Garlic, Minced
  • 1 Large Carrot (โ‰ˆ80 g / 2.8 oz), Grated
  • 1 Celery Stalk (โ‰ˆ50 g / 1.8 oz), Diced
  • 2 tbsp (30 ml) Olive Oil
  • 2 tbsp (30 g) Butter
  • 2 tbsp (30 g) Flour
  • 300 ml (1 ยผ cup) Vegetable Broth (Low-Sodium)
  • 1 tbsp (15 ml) Tomato Paste
  • 1 tsp (5 ml) Smoked Paprika
  • ยฝ tsp (2.5 ml) Dried Thyme
  • ยผ tsp (1.25 ml) Black Pepper
  • ยฝ tsp (2.5 ml) Sea Salt
  • 2 tbsp (30 g) Roasted Red Pepper Puree
  • ยผ cup (30 g) Panko Breadcrumbs
  • 1 tbsp (15 ml) Melted Butter (for Breadcrumbs)
  • 1 tbsp (15 g) Parsley, Chopped
  • Zest of ยฝ Lemon

Instructions

  1. Prep Oven & Dish: Preheat oven to 180ยฐC (350ยฐF) and grease a 23 x 33 cm baking dish.
  2. Cook Noodles: Boil noodles until al dente, drain, and rinse.
  3. Sautรฉ Vegetables: Sautรฉ onion, carrot, and celery until softened, then add garlic.
  4. Brown Beef: Brown ground beef, season with spices.
  5. Make Sauce: Stir in flour, then gradually add broth and tomato paste, simmer until thickened.
  6. Add Sour Cream: Stir in sour cream, roasted red pepper puree, and cheese.
  7. Combine & Transfer: Combine noodles and sauce, transfer to baking dish.
  8. Top & Bake: Sprinkle with cheese and breadcrumbs, bake for 25-30 minutes.
  9. Rest & Garnish: Let rest for 5 minutes, garnish with parsley and lemon zest.
