- 250 g (9 oz) Wide Egg Noodles (Cooked Al Dente)
- 200 g (7 oz) Sour Cream (Full-Fat)
- 150 g (5.3 oz) Cheddar Cheese, Grated
- 1 Medium Onion (โ150 g / 5.3 oz), Diced
- 2 Cloves Garlic, Minced
- 1 Large Carrot (โ80 g / 2.8 oz), Grated
- 1 Celery Stalk (โ50 g / 1.8 oz), Diced
- 2 tbsp (30 ml) Olive Oil
- 2 tbsp (30 g) Butter
- 2 tbsp (30 g) Flour
- 300 ml (1 ยผ cup) Vegetable Broth (Low-Sodium)
- 1 tbsp (15 ml) Tomato Paste
- 1 tsp (5 ml) Smoked Paprika
- ยฝ tsp (2.5 ml) Dried Thyme
- ยผ tsp (1.25 ml) Black Pepper
- ยฝ tsp (2.5 ml) Sea Salt
- 2 tbsp (30 g) Roasted Red Pepper Puree
- ยผ cup (30 g) Panko Breadcrumbs
- 1 tbsp (15 ml) Melted Butter (for Breadcrumbs)
- 1 tbsp (15 g) Parsley, Chopped
- Zest of ยฝ Lemon
Instructions
- Prep Oven & Dish: Preheat oven to 180ยฐC (350ยฐF) and grease a 23 x 33 cm baking dish.
- Cook Noodles: Boil noodles until al dente, drain, and rinse.
- Sautรฉ Vegetables: Sautรฉ onion, carrot, and celery until softened, then add garlic.
- Brown Beef: Brown ground beef, season with spices.
- Make Sauce: Stir in flour, then gradually add broth and tomato paste, simmer until thickened.
- Add Sour Cream: Stir in sour cream, roasted red pepper puree, and cheese.
- Combine & Transfer: Combine noodles and sauce, transfer to baking dish.
- Top & Bake: Sprinkle with cheese and breadcrumbs, bake for 25-30 minutes.
- Rest & Garnish: Let rest for 5 minutes, garnish with parsley and lemon zest.
