  • 2 Tbsp (30 g) Unsalted Butter, softened
  • 2 Tbsp (30 ml) Extra-Virgin Olive Oil
  • 3 Cloves Garlic, minced
  • 2 Tbsp (30 ml) Honey
  • 1 tsp (2 g) Smoked Paprika
  • ยฝ tsp (2 g) Sea Salt
  • ยผ tsp (1 g) Freshly Ground Black Pepper
  • Zest of 1 Lemon
  • 2 Tbsp (15 g) Toasted Almond Slivers
  • 1 Tbsp (5 g) Finely Chopped Fresh Parsley

Instructions

  1. Preheat and Prep: Preheat oven to 200ยฐC (390ยฐF) and line a baking sheet with parchment paper.
  2. Make the Glaze: Combine butter, oil, garlic, honey, paprika, lemon zest, salt, and pepper; whisk until smooth.
  3. Coat Carrots: Toss carrots with half of the glaze.
  4. First Roast: Spread carrots on the baking sheet and roast for 20 minutes.
  5. Glaze and Continue: Toss with remaining glaze and roast for 15-20 minutes.
  6. Check for Tenderness: Carrots are done when tender and caramelized.
  7. Garnish and Serve: Transfer to a platter, drizzle with pan juices, and garnish with almonds and parsley.

Notes

For optimal caramelization, ensure carrots are in a single layer on the baking sheet. Toasting the almonds enhances their flavor and crunch.
