- 4 ears corn (1.5 lb), husked and silk removed
- 3 tbsp (42g) unsalted butter, divided
- 3 tbsp (45ml) honey, divided
- 1 tsp (2g) chipotle chili powder
- Zest of 1 lime plus 1 tbsp (15ml) lime juice
- 0.5 tsp (2.5ml) sea salt
- 0.25 tsp (1.25ml) black pepper
- 2 tbsp (15g) toasted pumpkin seeds
- 2 tbsp (6g) chopped cilantro (optional)
Instructions
- Prepare Corn: Husk corn and remove silk.
- Make Glaze: Melt 2 tbsp butter, whisk in 2 tbsp honey, chipotle powder, lime zest, salt, and pepper.
- Coat & Cook: Add corn to skillet, coat with glaze, and cook 4-5 minutes per side, basting frequently.
- Final Glaze: Add remaining butter, honey, and lime juice; swirl to combine.
- Serve: Transfer to platter, drizzle with glaze, and garnish with pumpkin seeds and cilantro.
Notes
For best results, use fresh, in-season sweet corn. Toasting pumpkin seeds enhances their flavor. Adjust chipotle powder to your spice preference.
