  • 240ml low-sodium vegetable broth
  • 240ml red kidney beans, drained and rinsed
  • 80g frozen corn kernels, thawed
  • 15ml olive oil
  • 5g chili powder
  • 5g smoked paprika
  • 2g ground cumin
  • Salt and pepper to taste
  • 120ml heavy cream or coconut cream
  • 5g chipotle peppers in adobo, minced
  • 5ml lime juice
  • Pinch sea salt
  • 25g cheddar cheese, grated
  • 8g fresh cilantro, chopped
  • ยฝ lime zest
  • Extra-virgin olive oil (optional)

Instructions

  1. Cook Pasta: Boil spaghetti until al dente, reserving ยฝ cup pasta water.
  2. Sautรฉ Aromatics: Sautรฉ diced onion in olive oil until translucent. Add garlic and cook until fragrant.
  3. Brown Beef: Brown ground beef, breaking it up with a spoon.
  4. Spice It Up: Season beef with chili powder, smoked paprika, cumin, salt, and pepper.
  5. Simmer Sauce: Add tomatoes, tomato paste, broth, beans, and corn. Simmer for 12-15 minutes.
  6. Prepare Cream: Heat cream, chipotle peppers, lime juice, and salt until warmed.
  7. Plate & Garnish: Serve spaghetti with sauce, drizzle with cream, and garnish with cheese, cilantro, and lime zest.

Notes

For a dairy-free option, use full-fat coconut cream. Reserve pasta water to adjust sauce consistency. Adjust chipotle pepper amount to control spice level.
