- 1.5 kg chicken thighs, trimmed
- 150 g smooth peanut butter
- 200 ml full-fat coconut milk
- 60 ml low-sodium soy sauce
- 30 ml lime juice
- 15 g grated ginger
- 3 cloves garlic, minced
- 30 g brown sugar
- 1 tsp chili flakes
- 1 tsp smoked paprika
- 1 tsp salt
- 0.5 tsp black pepper
- 150 ml water
- 2 Tbsp toasted coconut flakes
- 2 Tbsp chopped cilantro
- Zest of 1 lime
Instructions
- Season Chicken: Season chicken thighs with salt and pepper.
- Make Peanut Sauce: Whisk peanut butter, coconut milk, soy sauce, lime juice, ginger, garlic, brown sugar, chili flakes, paprika, and water until smooth.
- Combine & Cook: Place chicken in slow cooker, pour sauce over, and cook on Low for 6-7 hours or High for 3-4 hours.
- Thicken Sauce: Simmer sauce with extra coconut milk and lime juice until thickened.
- Plate & Garnish: Arrange chicken, spoon sauce, and garnish with coconut, cilantro, and lime zest.
Notes
For best results, use full-fat coconut milk and freshly squeezed lime juice. Adjust chili flakes to your preferred spice level.
