These Slow Cooker Beef French Dip Sandwiches feature tender, fall-apart beef and a deeply savory miso-caramelized onion au jus. Perfect for a comforting and flavorful meal.

- 1.5 kg beef chuck roast, trimmed
- 2 tbsp vegetable oil
- 1 large yellow onion, thinly sliced
- 2 tbsp butter
- 1 tbsp white miso paste
- 500 ml low-sodium beef broth
- 1 tsp soy sauce
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp kosher salt
- 4 baguette rolls or hoagie rolls
- 80 g smoked gouda cheese
- Fresh thyme sprigs
Instructions
- Prepare Beef: Pat beef dry and season with salt and pepper.
- Sear Roast: Sear beef in oil for 3 minutes per side, then transfer to slow cooker.
- Caramelize Onions: Cook onions in butter for 15-20 minutes until golden brown.
- Add Miso: Stir in miso paste and soy sauce; cook for 2-3 minutes.
- Combine & Cook: Add broth and onion mixture to beef in slow cooker; sprinkle with paprika.
- Slow Cook: Cook on low for 8-9 hours or high for 4-5 hours until tender.
- Rest & Shred: Rest beef for 10 minutes, then shred with forks.
- Prepare Au Jus: Skim fat from cooking liquid; keep warm.
- Toast Rolls: Broil rolls with cheese for 1-2 minutes until melted.
- Assemble & Serve: Layer beef on rolls, drizzle with au jus, and garnish with thyme.
Notes
For best results, use a chuck roast and don’t rush the onion caramelization process. Low-sodium broth allows for better flavor control.
