- 800 g beef sirloin or chuck, cut into 2 cm pieces
- 600 g baby potatoes, halved
- 4 tbsp (60 g) unsalted butter, divided
- 3 cloves garlic, minced
- 1 tsp (5 g) sea salt
- 0.5 tsp (2.5 g) black pepper
- 1 tsp (2 g) smoked paprika
- 0.5 tsp (1 g) ground cumin
- 240 ml (1 cup) low-sodium halal beef broth
- 1 tbsp (15 ml) halal-certified soy sauce
- 0.5 tsp (1 g) saffron threads
- 2 tbsp (30 ml) warm water
- 1 tsp (5 g) lemon zest (optional)
- 2 tbsp (6 g) fresh parsley, chopped
Instructions
- Season Beef: Combine beef with salt, pepper, paprika, and cumin.
- Sear Beef: Sear beef in batches with 2 tbsp butter until browned.
- Combine in Crockpot: Add potatoes, garlic, broth, soy sauce, and remaining butter to crockpot with beef.
- Slow Cook: Cook on LOW for 6-8 hours or HIGH for 3-4 hours, until tender.
- Prepare Saffron Glaze: Melt 2 tbsp butter with garlic, then stir in saffron-water infusion.
- Combine and Finish: Stir saffron glaze into beef and potatoes; let sit for 5 minutes.
- Serve: Garnish with parsley and lemon zest, serve hot.
Notes
For a richer flavor, use chuck roast. Don’t skip searing the beef for optimal texture and taste. Adjust seasoning to your preference.
