Description

A hearty, comfort-food skillet meal featuring browned ground beef, savory diced potatoes, and aromatic vegetables all cooked in one pot for easy cleanup and deep flavor.

Ingredients

Scale
  • 1.5 lbs (680g) ground beef (80/20 or 85/15 recommended)
  • 1 tablespoon olive oil or vegetable oil
  • 1 large yellow onion, diced
  • 1 large red bell pepper, cored, seeded, and diced
  • 3 cloves garlic, minced
  • 2 lbs (900g) Yukon Gold potatoes, peeled and diced into ยฝ-inch cubes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Step: Peel and dice potatoes into uniform ยฝ-inch cubes and soak in cold water to prevent browning and remove excess starch.
  2. Step: Heat a large, heavy-bottomed skillet or Dutch oven over medium-high heat; add olive oil if beef is lean, then add ground beef and cook until browned (7-10 minutes).
  3. Step: Drain excess fat from the skillet, leaving about 1-2 tablespoons for flavor.
  4. Step: Sautรฉ diced onion and bell pepper over medium heat for 5-7 minutes, adding minced garlic during the last minute.
  5. Step: Drain potatoes thoroughly, add them to the skillet, and stir in smoked paprika, dried thyme, salt, and black pepper.
  6. Step: Pour in Worcestershire sauce and beef broth, scraping the bottom of the pan to loosen browned bits, and bring to a simmer.
  7. Step: Reduce heat to medium-low, cover tightly with a lid, and cook for 15-20 minutes until potatoes are tender.
  8. Step: Remove the lid, increase heat to medium-high, and cook for 5-10 minutes without stirring frequently to develop a crust.
  9. Step: Adjust seasonings, stir in fresh parsley, and serve hot.

Notes

For best results, use a cast iron skillet to achieve a superior crust on the potatoes. Top with a fried egg for a classic brunch presentation.
