  • 4 Cloves Garlic: Minced
  • 800 g (1.75 lb) Yukon Gold Potatoes: Quartered
  • 150 g (5 oz) Sun-Dried Tomatoes: Drained and chopped
  • 100 g (3.5 oz) Kalamata Olives: Pitted and halved
  • 1 tsp (5 ml) Lemon Zest: For brightness
  • 400 ml (13.5 fl oz) Low-Sodium Vegetable Broth: Liquid base
  • 1 tsp (5 ml) Italian Seasoning Blend: Dried herbs
  • ½ tsp (2.5 ml) Smoked Paprika: Adds smoky depth
  • ¼ tsp (1.25 ml) Crushed Red Pepper Flakes: Optional, for heat
  • 30 g (1 oz) Parmesan Cheese: Grated, for garnish

Instructions
