- 4 Cloves Garlic: Minced
- 800 g (1.75 lb) Yukon Gold Potatoes: Quartered
- 150 g (5 oz) Sun-Dried Tomatoes: Drained and chopped
- 100 g (3.5 oz) Kalamata Olives: Pitted and halved
- 1 tsp (5 ml) Lemon Zest: For brightness
- 400 ml (13.5 fl oz) Low-Sodium Vegetable Broth: Liquid base
- 1 tsp (5 ml) Italian Seasoning Blend: Dried herbs
- ½ tsp (2.5 ml) Smoked Paprika: Adds smoky depth
- ¼ tsp (1.25 ml) Crushed Red Pepper Flakes: Optional, for heat
- 30 g (1 oz) Parmesan Cheese: Grated, for garnish

- Sear Chicken: Brown chicken thighs skin-side down for 4-5 minutes per side, then transfer to crockpot.
- Sauté Aromatics: Sauté onion until translucent (3-4 minutes), then add garlic and cook for 30 seconds.
- Deglaze Skillet: Scrape up browned bits with broth and add to crockpot.
- Assemble Crockpot: Combine potatoes, tomatoes, olives, lemon zest, broth, paprika, and pepper flakes in crockpot.
- Slow Cook: Cook on Low for 6-8 hours or High for 3-4 hours, until chicken reaches 75°C (165°F).
