  • 600g (21oz) Cream Cheese, Softened (3 ยฝ cups), full-fat recommended
  • 120g (ยฝ cup) Granulated Sugar
  • 2 Large Eggs, at Room Temperature
  • 1 tsp (5ml) Alcohol-Free Vanilla Extract
  • 120g (4oz) Smooth Peanut Butter (ยฝ cup), halal-certified
  • 150g (5oz) Dark Chocolate Chips (1 cup)
  • 200g (7oz) Butterfinger Candy Bars, Crushed (about 1 ยฝ cups)
  • 120ml (ยฝ cup) Heavy Cream
  • 100g (ยฝ cup) Light Brown Sugar
  • 60ml (ยผ cup) Water
  • ยฝ tsp (2.5g) Fine Sea Salt, plus extra for garnish
  • Optional: 1 tsp (5ml) Almond Extract

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs, melted butter, and sugar; press into a 9×13 inch pan.
  2. Bake the Crust: Bake at 160ยฐC (320ยฐF) for 8 minutes; cool slightly.
  3. Cream the Cheese: Beat softened cream cheese until smooth.
  4. Add Sugar & Eggs: Gradually add sugar, then eggs, beating well after each.
  5. Flavor the Filling: Stir in vanilla extract and peanut butter (and almond extract, if using).
  6. Marble with Chocolate: Melt chocolate; fold half into the cheesecake batter.
  7. Make Salted Caramel: Combine brown sugar, water, and salt; simmer until thickened.
  8. Finish Caramel: Whisk in heavy cream; cool.
  9. Assemble & Swirl: Pour batter over crust; swirl in cooled caramel.
  10. Bake Cheesecake: Bake at 160ยฐC (320ยฐF) for 35-40 minutes.
  11. Cool Slowly: Turn off oven, crack door, cool for 1 hour.
  12. Chill & Set: Cool completely, then refrigerate for at least 4 hours.
  13. Garnish & Serve: Slice, drizzle with chocolate, sprinkle with Butterfinger, and add salt.

Notes
