  • 1 tablespoon fresh lemon juice
  • 4 black tea bags or 12 g loose leaf black tea
  • 4 cups (950 ml) hot water (for brewing tea)
  • 1/41/2 cup (50100 g) granulated sugar (for tea, to taste)
  • Ice cubes, for serving
  • 1 small ripe peach, thinly sliced (for garnish)
  • 4 small sprigs fresh mint (for garnish)

Instructions

  1. Prepare Ginger-Cardamom Compote: In a saucepan, combine diced peaches, grated ginger, crushed cardamom pods, 1/4 cup sugar, and 1/4 cup water. Simmer over medium heat for 10-12 minutes, stirring occasionally, until peaches soften and break down.
  2. Cool Compote Base: Lightly mash about half of the cooked peaches using a fork or masher. Remove from heat, stir in lemon juice, then cool completely. Refrigerate compote for at least 2 hours until thoroughly chilled.
  3. Brew Tea Base: Steep black tea bags in 4 cups of hot water for 4-5 minutes. Remove tea bags and stir in 1/4 to 1/2 cup sugar until dissolved. Let sweetened tea cool to room temperature, then refrigerate until thoroughly chilled.
  4. Assemble Iced Peach Tea: Spoon 2-3 tablespoons of chilled compote into the bottom of a tall glass. Fill the glass generously with ice cubes. Slowly pour the chilled black tea over the ice and compote to create a marble swirl effect.
  5. Garnish and Serve: Garnish each glass with a fresh peach slice on the rim and a sprig of mint before serving immediately.

Notes

Store the prepared compote and tea base separately in the refrigerator for up to 3 days. To avoid bitterness in the tea base, ensure you do not oversteep the black tea bags beyond 4-5 minutes. For a make-ahead strategy, prepare both components in advance and assemble just before serving.
