Description

This Chicken Divan Casserole is a comforting classic featuring tender chicken, broccoli, and a creamy, cheesy sauce topped with a crunchy crust. It’s a perfect weeknight meal or potluck dish.


Ingredients

  • 500g (1.1lb) diced chicken breast
  • 250g (9oz) broccoli florets
  • 30g (2Tbsp) unsalted butter
  • 30g (2Tbsp) all-purpose flour
  • 480ml (2cups) warmed whole milk
  • 120ml (½cup) heavy cream
  • 150g (5.3oz) grated sharp cheddar cheese (halal-certified)
  • 50g (½cup) grated Parmesan cheese (halal-certified)
  • 1tsp dry mustard powder
  • ½tsp ground nutmeg
  • Salt and pepper to taste
  • 30g (¼cup) panko breadcrumbs
  • 15g (1Tbsp) toasted sliced almonds
  • 1Tbsp olive oil
  • Fresh parsley for garnish
  • Smoked paprika for garnish

Instructions

  1. Prep & Preheat: Preheat oven to 190°C (375°F) and grease a baking dish.
  2. Blanch Broccoli: Boil broccoli for 2 minutes, drain, and set aside.
  3. Sauté Chicken: Cook diced chicken in olive oil until cooked through.
  4. Make Roux: Melt butter, whisk in flour, and cook for 1 minute.
  5. Build Sauce: Whisk in milk and cream until smooth and thickened.
  6. Flavor Sauce: Simmer sauce, stir in mustard, nutmeg, and half the cheeses.
  7. Combine & Layer: Mix chicken, broccoli, and sauce in the baking dish.
  8. Add Cheese: Sprinkle remaining cheeses over the top.
  9. Top with Crumbs: Combine panko, almonds, and butter; sprinkle over casserole.
  10. Bake: Bake for 25-30 minutes until golden brown and bubbly.
  11. Rest & Serve: Let rest for 5 minutes before serving.

Notes

For a quicker meal, use pre-cooked rotisserie chicken. Blanching the broccoli is key to preventing a mushy texture.
