- 500g (1.1lb) diced chicken breast
- 250g (9oz) broccoli florets
- 30g (2Tbsp) unsalted butter
- 30g (2Tbsp) all-purpose flour
- 480ml (2cups) warmed whole milk
- 120ml (½cup) heavy cream
- 150g (5.3oz) grated sharp cheddar cheese (halal-certified)
- 50g (½cup) grated Parmesan cheese (halal-certified)
- 1tsp dry mustard powder
- ½tsp ground nutmeg
- Salt and pepper to taste
- 30g (¼cup) panko breadcrumbs
- 15g (1Tbsp) toasted sliced almonds
- 1Tbsp olive oil
- Fresh parsley for garnish
- Smoked paprika for garnish
Instructions
- Prep & Preheat: Preheat oven to 190°C (375°F) and grease a baking dish.
- Blanch Broccoli: Boil broccoli for 2 minutes, drain, and set aside.
- Sauté Chicken: Cook diced chicken in olive oil until cooked through.
- Make Roux: Melt butter, whisk in flour, and cook for 1 minute.
- Build Sauce: Whisk in milk and cream until smooth and thickened.
- Flavor Sauce: Simmer sauce, stir in mustard, nutmeg, and half the cheeses.
- Combine & Layer: Mix chicken, broccoli, and sauce in the baking dish.
- Add Cheese: Sprinkle remaining cheeses over the top.
- Top with Crumbs: Combine panko, almonds, and butter; sprinkle over casserole.
- Bake: Bake for 25-30 minutes until golden brown and bubbly.
- Rest & Serve: Let rest for 5 minutes before serving.
Notes
For a quicker meal, use pre-cooked rotisserie chicken. Blanching the broccoli is key to preventing a mushy texture.
