  • 500g (1.1lb) chicken thighs, cut into strips
  • 2 Tbsp (30ml) olive oil
  • 2 Tbsp (30ml) lemon juice
  • 3 cloves garlic, minced
  • 1 tsp (5g) cumin
  • 1 tsp (5g) smoked paprika
  • 0.5 tsp (2g) oregano
  • 0.5 tsp (2g) sumac (optional)
  • 0.5 tsp (3g) salt
  • 0.25 tsp (1g) black pepper
  • 8 small (โ‰ˆ8cm/3inch) whole-wheat or corn tortillas
  • 120g (4oz) Greek yogurt
  • 1 Tbsp (15ml) olive oil (for sauce)
  • 1 tsp (5ml) lemon zest
  • 1 Tbsp (15g) dill, chopped
  • 0.5 cucumber, diced
  • 0.25 cup (35g) feta cheese
  • 0.25 cup (40g) cherry tomatoes, diced
  • 2 Tbsp (30g) Kalamata olives, sliced
  • 2 Tbsp (10g) red onion, sliced
  • 1 Tbsp (5g) mint, chopped
  • 1 Tbsp (5g) parsley, chopped
  • 1 Tbsp (15g) pomegranate seeds
  • 1 tsp (5g) smoked sea salt

Instructions

  1. Marinate Chicken: Combine olive oil, lemon juice, garlic, cumin, paprika, oregano, sumac, salt, and pepper. Coat chicken strips and marinate for 15-20 minutes.
  2. Prepare Tzatziki: Mix Greek yogurt, olive oil, lemon zest, dill, and cucumber. Refrigerate until ready to use.
  3. Cook Chicken: Sear chicken in a skillet over medium-high heat for 4-5 minutes per side, until cooked through. Rest for 5 minutes, then slice.
  4. Warm Tortillas: Microwave tortillas covered with a damp towel for 30 seconds, or heat individually in a dry skillet.
  5. Assemble Tacos: Spread tzatziki on tortillas, top with chicken, feta, tomatoes, olives, onion, mint, parsley, pomegranate seeds, and smoked sea salt.

Notes

For the best tzatziki, use full-fat Greek yogurt and squeeze excess water from the cucumber. Soaking red onion in cold water can mellow its flavor.
