Description

This savory keto cloud bread recipe offers a high-protein, low-carb bread replacement featuring a light and fluffy texture with a garlic-herb cream cheese swirl. It is perfect for sandwiches or burgers and ideal for meal prep.

Ingredients

Scale
  • 120 g full-fat cream cheese, softened (divided)
  • 4 large egg whites, room temperature
  • 0.25 teaspoon cream of tartar
  • 0.25 teaspoon fine sea salt
  • 1 small clove garlic, minced finely
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon grated Parmesan-style cheese

Instructions

  1. Preheat Oven and Prepare Pan: Preheat oven to 150ยฐC (300ยฐF) and position the rack in the middle. Line a large baking sheet with parchment paper.
  2. Whip Egg Whites: In a clean, dry stand mixer bowl, beat room-temperature egg whites, cream of tartar, and salt on high speed until very stiff, glossy peaks form (approx. 5-7 minutes).
  3. Whisk Cream Cheese Base: In a separate small bowl, gently whisk 60g of softened cream cheese until completely smooth and creamy.
  4. Fold Cream Cheese into Meringue: Carefully fold the whisked cream cheese into the stiff egg whites using a spatula, being gentle to preserve air. Fold until no streaks of cream cheese remain, about 10-12 folds; do not overmix.
  5. Prepare Savory Swirl Mixture: In another small bowl, combine the remaining 60g softened cream cheese, minced fresh garlic, chopped chives, chopped parsley, and grated Parmesan-style cheese. Mix until well combined and smooth.
  6. Portion Cloud Bread: Drop 6-8 equal mounds of the cloud bread mixture onto the prepared baking sheet, spacing them apart. Use the back of a spoon to slightly flatten and shape them into round disks, about 1 cm thick.
  7. Add Swirl: Spoon a small dollop (about 1 teaspoon) of the savory cream cheese mixture onto the center of each cloud bread disk. Gently swirl the herb cheese into the batter with a toothpick to create ribbons.
  8. Bake Cloud Bread: Bake for 20-25 minutes, or until the cloud breads are golden brown, puffy, and set. They should feel light and springy to the touch.
  9. Cool Completely: Remove from the oven and let cool on the baking sheet for 5 minutes. Carefully transfer to a wire rack to cool completely before serving.

Notes

Ensure egg whites are at room temperature and separate carefully for maximum volume. Use full-fat cream cheese for best texture, and substitute cream of tartar with 0.5 teaspoon lemon juice or white vinegar if needed.
