Instructions

- Fold Cream Cheese into Meringue: Carefully fold the whisked cream cheese into the stiff egg whites using a spatula, being gentle to preserve air. Fold until no streaks of cream cheese remain, about 10-12 folds; do not overmix.
- Prepare Savory Swirl Mixture: In another small bowl, combine the remaining 60g softened cream cheese, minced fresh garlic, chopped chives, chopped parsley, and grated Parmesan-style cheese. Mix until well combined and smooth.
- Portion Cloud Bread: Drop 6-8 equal mounds of the cloud bread mixture onto the prepared baking sheet, spacing them apart. Use the back of a spoon to slightly flatten and shape them into round disks, about 1 cm thick.
- Add Swirl: Spoon a small dollop (about 1 teaspoon) of the savory cream cheese mixture onto the center of each cloud bread disk. Gently swirl the herb cheese into the batter with a toothpick to create ribbons.
