  • 1 tsp Cream of Tartar
  • 1 tsp Sea Salt
  • 2 tbsp (30ml) Unsalted Butter, Melted
  • 2 tsp Sesame Seeds
  • 8oz (225g) Cheddar Cheese Slices
  • 240ml (1 cup) Mayonnaise (Egg-Based)
  • 2 tbsp Sugar-Free Ketchup
  • 1 tbsp Yellow Mustard
  • 1 tsp White Distilled Vinegar
  • 1 tsp Sweet Pickle Relish (No Wine)
  • ยฝ tsp Onion Powder
  • ยฝ tsp Garlic Powder
  • ยผ tsp Smoked Paprika
  • 30g (ยฝ cup) Iceberg Lettuce, Shredded
  • 4 Large Dill Pickle Chips
  • 30g (ยผ cup) White Onion, Diced

Instructions

  1. Prepare Big Mac Sauce: Combine mayonnaise, ketchup, mustard, vinegar, relish, onion powder, garlic powder, and paprika; refrigerate for at least 15 minutes.
  2. Whip Cloud Buns: Beat egg whites with cream of tartar to stiff peaks; gently fold in almond flour, mozzarella, cream cheese, salt, and butter.
  3. Bake Cloud Buns: Preheat oven to 180ยฐC (350ยฐF); bake bun batter for 12-15 minutes until golden brown.
  4. Shape Beef Patties: Form ground beef into 60-g (2-oz) balls; chill for 15 minutes.
  5. Smash & Sear Patties: Sear patties in a hot skillet for 2 minutes per side, adding cheddar cheese during the last minute.
  6. Assemble Burgers: Layer sauce, lettuce, onion, pickle, and patties between cloud bun halves.
