- 500 g (1 lb) Potatoes, thinly sliced
- 250 g (9 oz) Cauliflower Florets, bite-size
- 200 g (7 oz) Chicken Sausage, sliced
- 150 g (5 oz) Onion, diced
- 3 cloves Garlic, minced
- 500 ml (2 cups) Low-sodium Vegetable Broth
- 240 ml (1 cup) Heavy Cream
- 120 g (1 cup) Mozzarella Cheese, shredded
- 60 g (½ cup) Parmesan Cheese, grated
- 2 tbsp (30 ml) Olive Oil
- 1 tsp (5 ml) Smoked Paprika
- ½ tsp (2.5 ml) Red Pepper Flakes (optional)
- Salt and Pepper to taste
- 2 tbsp (30 g) Parsley, chopped
- 1 tsp (5 g) Lemon Zest, grated
- 2 tbsp (15 g) Pine Nuts (optional)
Instructions
- Prep Oven & Dish: Preheat oven to 190°C (375°F) and lightly oil a 9×13 inch baking dish.
- Sauté Aromatics: Sauté diced onion in olive oil until translucent, then add garlic, paprika, and red pepper flakes.
- Brown Sausage: Add sliced sausage and brown for 3-4 minutes.
- Simmer Vegetables: Simmer sliced potatoes and cauliflower in broth for 5 minutes.
- Combine & Thicken: Combine sausage mixture with vegetables, add heavy cream, and simmer for 5 minutes.
- Season Mixture: Season with salt and pepper to taste.
- Assemble Casserole: Transfer to baking dish, top with mozzarella and parmesan, and sprinkle with lemon zest.
- Bake to Perfection: Bake uncovered for 25-30 minutes, until bubbly and golden brown.
- Rest & Serve: Let rest for 5 minutes before serving.
Notes
For a spicier casserole, increase the amount of red pepper flakes. Using good quality mozzarella ensures a better cheese pull.
