- ยผ cup Kalamata Olives: Pitted and halved.
- 1 cup Arugula Leaves: Fresh.
- 2 tbsp Pomegranate Arils: For garnish.
- 1 tbsp Fresh Dill: Chopped, for garnish.
- Lemon Wedges: For serving.
Instructions
- Marinate Chicken: Combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Coat chicken strips and marinate for 15+ minutes.
- Prepare Yogurt Sauce: Mix Greek yogurt, cucumber, mint, lemon juice, and honey (optional). Refrigerate to chill.
- Sear Chicken: Heat skillet to medium-high. Sear chicken 3-4 minutes per side, until cooked through (74ยฐC/165ยฐF). Rest for 5 minutes.
- Warm Tortillas: Warm tortillas on a dry skillet or microwave for 10 seconds.
- Assemble Tacos: Fill tortillas with arugula, chicken, tomatoes, onion, and olives.
- Finish & Serve: Top with feta, yogurt sauce, pomegranate, and dill. Serve with lemon wedges.
Notes
For best results, use full-fat Greek yogurt for a richer sauce. Adjust lemon juice and honey to your preference.
