  • 150g Feta Cheese: Crumbled.

  • ยผ cup Cucumber: Finely diced.
  • 1 tbsp Fresh Mint: Finely chopped.
  • 1 tsp Honey: Optional, for sauce sweetness.
  • ยฝ cup Cherry Tomatoes: Quartered.
  • ยผ cup Red Onion: Thinly sliced.
  • ยผ cup Kalamata Olives: Pitted and halved.
  • 1 cup Arugula Leaves: Fresh.
  • 2 tbsp Pomegranate Arils: For garnish.
  • 1 tbsp Fresh Dill: Chopped, for garnish.
  • Lemon Wedges: For serving.

Instructions

  1. Marinate Chicken: Combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Coat chicken strips and marinate for 15+ minutes.
  2. Prepare Yogurt Sauce: Mix Greek yogurt, cucumber, mint, lemon juice, and honey (optional). Refrigerate to chill.
  3. Sear Chicken: Heat skillet to medium-high. Sear chicken 3-4 minutes per side, until cooked through (74ยฐC/165ยฐF). Rest for 5 minutes.
  4. Warm Tortillas: Warm tortillas on a dry skillet or microwave for 10 seconds.
  5. Assemble Tacos: Fill tortillas with arugula, chicken, tomatoes, onion, and olives.
  6. Finish & Serve: Top with feta, yogurt sauce, pomegranate, and dill. Serve with lemon wedges.
