- 60ml (2 fl oz) Buffalo Hot Sauce: Adjust to taste.
- 120ml (ยฝ cup) Ranch Dressing: Or homemade low-fat ranch.
- 100g (3ยฝoz) Almond Flour: Gluten-free coating.
- 50g (1ยพoz) Parmesan Cheese: Grated.
- 1 tsp (5g) Smoked Paprika: For smoky flavor.
- 1 tsp (3g) Garlic Powder: Essential seasoning.
- 1 tsp (3g) Onion Powder: Adds savory flavor.
- ยฝ tsp (1g) Black Pepper: Freshly ground.
- 1 tbsp (8g) Erythritol (Optional): Sugarless sweetener.
- 1 Egg + 2 tbsp (30ml) Water: Egg wash for coating.
- Olive Oil Spray: For crispy exterior.
- Garnish: Chives, Celery, Buffalo Sauce, Ranch Dip.
Instructions
- Preheat & Prep: Preheat oven to 220ยฐC (425ยฐF) and line a baking sheet with parchment and a wire rack.
- Prepare Coating: Combine almond flour, Parmesan, paprika, garlic powder, onion powder, pepper, and erythritol.
- Create Egg Wash: Whisk egg and water.
- Marinate Chicken: Toss chicken with buffalo sauce and ranch. Marinate for 5-30 minutes.
- Coat Chicken: Dip chicken in egg wash, then press into almond flour mixture. Place on wire rack.
- Oil & Bake: Spray with olive oil and bake for 12 minutes, flip, spray again, and bake 8-10 minutes until golden and cooked through.
- Rest & Serve: Let rest for 5 minutes before serving.
Notes
For extra crispy chicken, ensure the wire rack allows air circulation. Adjust buffalo sauce amount to control spice level.
