- 0.25 tsp (1g) garlic powder
- 0.25 tsp (1g) black pepper
- 0.5 tsp (2g) salt
- 8 corn tortillas (6in)
- 100g (3.5oz) feta cheese
- 0.5 cup (120ml) Greek yogurt
- 1 tbsp (15ml) olive oil
- 1 tsp (5ml) lemon zest
- 1 tsp (5ml) lemon juice
- 1 tsp (2g) dried mint
- 1 tbsp (15ml) honey
- 0.25 cup (30g) pomegranate seeds
- 2 tbsp (30g) parsley, chopped
- 1 tbsp (15g) red onion, sliced
- 0.25 tsp (1g) sumac (optional)
Instructions
- Prepare Marinade: Whisk together olive oil, lemon juice, za’atar, paprika, cumin, garlic powder, pepper, and salt.
- Marinate Chicken: Toss chicken strips with marinade; refrigerate for 30-120 minutes.
- Make Yogurt Sauce: Combine yogurt, olive oil, lemon zest, lemon juice, mint, and honey; chill.
- Preheat Grill: Preheat grill to medium-high heat and lightly oil grates.
- Grill Chicken: Grill chicken for 3-4 minutes per side, until cooked through.
- Warm Tortillas: Warm tortillas on the grill or in the microwave.
- Assemble Tacos: Layer chicken, feta, and yogurt sauce onto tortillas; top with pomegranate, parsley, and red onion.
