Description

Moist grilled chicken topped with melty provolone and served on oil toasted brioche bun with seasoned mayo, fresh tomatoes, turkey bacon, iceberg lettuce and pickles.


Ingredients

  • 4 medium chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp pickle juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/3rd cup mayonnaise
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • pinch of salt & pepper
  • 1 tsp pickle juice
  • 8 slices turkey bacon
  • 4 Brioche buns
  • 46 slices provolone cheese
  • iceberg lettuce
  • thinly sliced red onion
  • pickle slices
  • sliced tomato

Instructions

  1. Marinate the chicken: Gently pound chicken to even thickness, combine olive oil, pickle juice, garlic powder, onion powder, paprika, salt & pepper, and marinate in the fridge for 1-2 hours.
  2. Grill the chicken: Cook over medium high heat for 4-5 minutes per side, top with provolone cheese for 30-60 seconds, and allow to rest for 5-10 minutes.
  3. Cook the Bacon & Toast the Buns: Cook turkey bacon in a skillet until crispy, then toast the buns in a thin layer of oil or butter until golden.
  4. Assemble the sandwiches: Mix mayonnaise, paprika, garlic powder, pickle juice, salt & pepper; spread on buns and layer with onion, pickle, tomato, grilled chicken, and lettuce.

Notes

For a low carb version, skip the brioche buns and serve in a lettuce wrap.
