Instructions
- Season: Season the chicken breasts on both sides with salt, pepper, and half the Italian seasoning.
- Brown: (Optional) Heat olive oil in a skillet over medium-high heat. Brown the chicken for 2 minutes per side to lock in juices and add color. Transfer to the crockpot.
- Mix: In a bowl, mix diced tomatoes, tomato paste, minced garlic, Parmesan, heavy cream, remaining Italian seasoning, and red pepper flakes.
- Combine: Pour the sauce over the chicken in the slow cooker, ensuring each piece is covered. Stir in chicken broth if you prefer a thinner sauce.
- Cook: Cover and cook on low for 6โ7 hours or on high for 3โ4 hours.
- Rest: When done, check the chicken for an internal temperature of 165ยฐF. Remove and let it rest for 5 minutes before slicing.
- Finish: Stir the sauce to combine, taste, and adjust salt and pepper. Whisk in an extra tablespoon of butter off the heat for a silkier finish.
- Serve: Serve the chicken topped with fresh basil or parsley and extra Parmesan.
