Instructions

  1. Season: Season the chicken breasts on both sides with salt, pepper, and half the Italian seasoning.
  2. Brown: (Optional) Heat olive oil in a skillet over medium-high heat. Brown the chicken for 2 minutes per side to lock in juices and add color. Transfer to the crockpot.
  3. Mix: In a bowl, mix diced tomatoes, tomato paste, minced garlic, Parmesan, heavy cream, remaining Italian seasoning, and red pepper flakes.
  4. Combine: Pour the sauce over the chicken in the slow cooker, ensuring each piece is covered. Stir in chicken broth if you prefer a thinner sauce.
  5. Cook: Cover and cook on low for 6โ€“7 hours or on high for 3โ€“4 hours.
  6. Rest: When done, check the chicken for an internal temperature of 165ยฐF. Remove and let it rest for 5 minutes before slicing.
