Description

These Easy Cheesy Ground Beef Enchiladas are a family favorite, blending savory seasoned beef and black beans with gooey melted cheese in a convenient one-pan meal.

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tsp chili powder
  • 1 tsp cumin
  • ยฝ tsp salt
  • 8 small corn or flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1 cup enchilada sauce
  • Fresh cilantro (optional, for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Preheat the Oven: Preheat your oven to 350ยฐF (175ยฐC).
  2. Cook the Beef: In a large skillet over medium heat, add the ground beef and onion. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Add Garlic: Stir in the minced garlic and sautรฉ for an additional minute until fragrant.
  4. Mix in Other Ingredients: Add black beans, diced tomatoes (with juices), chili powder, cumin, and salt to the beef mixture. Cook for about 5 minutes until heated through and well combined.
  5. Warm Tortillas: While the mixture cooks, wrap the tortillas in a damp paper towel and microwave them for about 30 seconds to soften.
  6. Assemble Enchiladas: Spoon about 2-3 tablespoons of the beef mixture into each tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in a greased baking dish.
  7. Top with Sauce: Pour enchilada sauce over the rolled tortillas, covering them generously. Sprinkle with remaining cheese on top.
  8. Bake: Place the dish in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and golden.
  9. Rest Before Serving: Remove the enchiladas from the oven and let them rest for about 10-15 minutes before serving.
  10. Garnish and Serve: Serve with chopped fresh cilantro and sour cream, if desired.

Notes

For a spicier version, add diced jalapeรฑos to the beef mixture. You can also substitute ground turkey or chicken for a leaner protein option.
