Description

This Crockpot Chili Dog Casserole combines classic chili dogs with a creamy, smoky cheddar swirl for a comforting and flavorful meal. It’s perfect for game day or a cozy weeknight dinner, requiring minimal effort thanks to the slow cooker.


Ingredients

  • 400g Beef Hot Dogs, sliced lengthwise
  • 500g Lean Ground Beef
  • 150g Onion, diced
  • 2 cloves Garlic, minced
  • 150g Red Bell Pepper, diced
  • 30g Jalapeรฑo, minced (optional)
  • 400g Diced Tomatoes, canned
  • 240ml Kidney Beans, drained and rinsed
  • 240ml Black Beans, drained and rinsed
  • 480ml Beef Chili Sauce
  • 250ml Vegetable Broth
  • 150g Sharp Cheddar Cheese, shredded
  • 100g Smoked Cheddar Cheese, shredded
  • 60ml Heavy Cream
  • 2 tbsp Chipotle in Adobo Sauce, minced
  • 1 tsp Smoked Paprika
  • 0.5 tsp Ground Cumin
  • Salt and Pepper, to taste
  • 120ml Sour Cream
  • 1 tbsp Lime Juice
  • 2 tbsp Cilantro, chopped

Instructions

  1. Brown Beef & Sautรฉ Veggies: Brown 500g ground beef, then sautรฉ 150g onion, 2 cloves garlic, 150g red bell pepper, and optional jalapeรฑo for 3 minutes.
  2. Simmer Chili Base: Add spices, 400g diced tomatoes, 240ml kidney beans, 240ml black beans, 480ml chili sauce, and 250ml broth; simmer for 10 minutes.
  3. Make Cheddar Swirl: Melt 100g smoked cheddar in 60ml heavy cream, then stir in 2 tbsp minced chipotle.
  4. Layer in Crockpot: Arrange sliced hot dogs in a crockpot, then pour chili over them.
  5. Add Cheese & Swirl: Sprinkle 150g sharp cheddar over chili, then dollop and swirl the chipotle cheddar sauce.
  6. Slow Cook: Cook on low for 6-8 hours or high for 3-4 hours, until hot dogs are tender and cheese is melted.
  7. Make Lime Crema: Combine 120ml sour cream and 1 tbsp lime juice.
  8. Serve & Garnish: Ladle into bowls, drizzle with lime crema, and garnish with 2 tbsp cilantro.
