Ingredients
- 4 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 cup heavy cream
- ยฝ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp dried oregano
- ยฝ tsp dried thyme
- ยผ tsp red pepper flakes (optional)
- ยฝ cup sun-dried tomatoes
- 2 tbsp butter
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Step 1: Pat chicken dry and season generously with salt and pepper on both sides.
- Step 2: In a medium bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes until smooth.
- Step 3: Place seasoned chicken breasts in the bottom of the slow cooker.
- Step 4: Pour the cream mixture evenly over the chicken.
- Step 5: Scatter sun-dried tomatoes over the top.
- Step 6: Cover and cook on LOW for 4โ5 hours or HIGH for 2โ3 hours.
- Step 7: 30 minutes before serving, stir in the butter to enrich and thicken the sauce.
- Step 8: Once done, sprinkle fresh basil or parsley over the top.
- Step 9: Serve warm with rice, mashed potatoes, pasta, or crusty bread.

Use chicken thighs for a juicier result if preferred. Avoid lifting the lid during cooking to maintain even heat. For a dairy-free version, substitute coconut milk and nutritional yeast.
