- 250g (8.8oz) Dried Spaghetti, broken in half
- 2 tbsp (30ml) Extra-Virgin Olive Oil
- 4 Cloves Garlic, Minced
- 150g (5.3oz) Yellow Onion, Finely Diced
- 1 tsp (5g) Red Pepper Flakes
- 500ml (2 cups) Low-Sodium Vegetable Broth
- 240ml (1 cup) Heavy Cream
- 100g (3.5oz) Grated Parmesan Cheese (Microbial Rennet)
- 30g (2 tbsp) Unsalted Butter
- Salt and Pepper to Taste
- 2 tbsp (30ml) Fresh Lemon Juice
- 2 tbsp (8g) Chopped Fresh Parsley
- 1 tbsp (15ml) Truffle Oil (Optional)
Instructions
- Sautรฉ Aromatics: Heat oil, sautรฉ onion until translucent (3-4 minutes), then add garlic and red pepper flakes (30 seconds).
- Combine & Boil: Add spaghetti and broth, bring to a boil, and cook for 8 minutes, stirring frequently.
- Create Sauce: Reduce heat, stir in cream, butter, and lemon juice; simmer for 2 minutes.
- Incorporate Cheese: Remove from heat, fold in Parmesan until melted, and season.
- Rest & Finish: Let rest covered for 2 minutes.
- Plate & Garnish: Serve with olive oil, parsley, Parmesan, and truffle oil (optional).
Notes
Using a heavy-bottomed pot prevents scorching. Breaking spaghetti helps it cook evenly. Don’t overcook the garlic.
