  • 2 boneless skinless chicken breasts
  • 12 ounces fettuccine
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 ounces cream cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley
  • 1/4 cup reserved pasta water

Instructions

  1. Step 1: Bring a large pot of salted water to a boil and cook the fettuccine until al dente. Reserve 1/4 cup pasta water, then drain the pasta.
  2. Step 2: Pat the chicken breasts dry and season them with salt, black pepper, and Italian seasoning.
  3. Step 3: Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5 to 6 minutes per side, or until golden and fully cooked through. Transfer to a cutting board and let rest.
  4. Step 4: In the same skillet, lower the heat to medium and melt the butter. Add the minced garlic and cook for about 30 seconds until fragrant.
  5. Step 5: Pour in the heavy cream and stir gently. Add the cream cheese and whisk until smooth.
  6. Step 6: Add the Parmesan cheese a little at a time, stirring constantly until the sauce is creamy and fully combined.
  7. Step 7: Stir in a little reserved pasta water if needed to loosen the sauce.
  8. Step 8: Add the cooked fettuccine to the skillet and toss until fully coated.
  9. Step 9: Slice the rested chicken and place it over the pasta.
  10. Step 10: Finish with chopped parsley and serve warm.

Notes

Do not let the Alfredo sauce boil hard after adding the cheese, or it can turn grainy instead of staying smooth and creamy.
