Description

A creamy, cheesy slow cooker dish featuring tender chicken and cheese-filled tortellini in a rich sun-dried tomato sauce, perfect for an easy and comforting dinner.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 9 ounces cheese tortellini (fresh or refrigerated)
  • 1/3 cup chopped sun-dried tomatoes (packed in oil)
  • 3 cloves garlic, minced
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/2 cup freshly grated Parmesan cheese (microbial-rennet)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Step: Season the chicken breasts with salt, pepper, and Italian seasoning. Place them at the bottom of the crockpot.
  2. Step: Scatter minced garlic and chopped sun-dried tomatoes evenly over the chicken.
  3. Step: Slowly pour the chicken broth and heavy cream over the chicken and tomatoes. Do not stir.
  4. Step: Cover the crockpot and cook on low for 4 hours or on high for 2 to 3 hours until chicken reaches 165ยฐF and is tender.
  5. Step: Remove chicken breasts and shred finely using two forks.
  6. Step: Stir cream cheese and Parmesan into the crockpot until melted and smooth.
  7. Step: Gently stir in the cheese tortellini, cover, and cook on high for 20 to 25 minutes until tortellini is tender but not mushy.
  8. Step: Return shredded chicken to the crockpot and stir gently to combine. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
  9. Step: Serve hot, optionally garnished with extra Parmesan or fresh basil.

Notes

Add tortellini near the end of cooking to prevent mushiness. Use cream cheese at room temperature for smooth melting. If sauce is too thin after adding tortellini, cook uncovered on high for 5-10 minutes to reduce. Frozen chicken breasts can be used but increase cooking time by 1 hour on low. For gluten-free, substitute tortellini with gluten-free ravioli or gnocchi.
