Description

  • 5 ml smoked paprika
  • 5 ml apple cider vinegar
  • 30 ml extra virgin olive oil
  • 2.5 ml fine sea salt
  • 5 g fresh parsley, chopped, for garnish

Instructions

  1. Prepare Cottage Cheese Base: In a medium mixing bowl, combine the cottage cheese, sour cream, lemon juice, 1/2 teaspoon sea salt, and black pepper. Stir thoroughly until well incorporated.
  2. Make Roasted Red Pepper Swirl: In a small food processor or blender, combine the drained roasted red peppers, garlic, smoked paprika, apple cider vinegar, extra virgin olive oil, and 1/2 teaspoon sea salt. Blend until completely smooth and creamy.
  3. Assemble Dip: Spoon the cottage cheese base into a serving bowl. Dollop generous spoonfuls of the red pepper swirl over the top. Using a small knife or skewer, gently create swirls and ribbons in the dip, avoiding overmixing.
  4. Chill Dip: Cover the dip and refrigerate for at least 30 minutes before serving. Chilling allows the flavors to meld.

Notes

Chilling for 30 minutes allows flavors to meld and prevents the dip from becoming runny. Plain Greek yogurt can substitute for sour cream. Add extra olive oil to the swirl if it seems too thick.
