- 2 tbsp (30 ml) olive oil
- 1 tsp (5 g) ground cumin
- 1 tsp (5 g) smoked paprika
- ยฝ tsp (2.5 g) garlic powder
- ยฝ tsp (2.5 g) onion powder
- ยฝ tsp (2.5 g) salt
- ยผ tsp (1.25 g) black pepper
- 2 tbsp (30 ml) lime juice
- 8 small corn tortillas (โ6 in / 15 cm)
- 120 ml (ยฝ cup) mayonnaise (halal-certified)
- 2 tbsp (30 ml) sour cream
- 1 chipotle pepper in adobo, minced (or 1 tsp chipotle powder)
- 1 tbsp (15 ml) lime juice (for crema)
- 1 tsp (5 g) honey
- Pinch of salt (for crema)
- ยฝ cup (75 g) fresh pineapple, diced
- ยผ cup (40 g) red bell pepper, finely diced
- 2 tbsp (30 ml) red onion, minced
- 1 tbsp (15 ml) cilantro, chopped
- 1 tsp (5 ml) lime juice (for salsa)
- Pinch of salt (for salsa)
- Fresh cilantro leaves, torn, for garnish
- 2 lime wedges, for serving
- Optional: thin radish slices, for garnish
Instructions
- Marinate Chicken: Combine olive oil, cumin, paprika, garlic powder, onion powder, salt, pepper, and lime juice. Coat chicken and marinate for 15-30 minutes.
- Make Chipotle Lime Crema: Whisk together mayonnaise, sour cream, chipotle pepper, lime juice, honey, and salt. Refrigerate until ready to use.
- Prepare Pineapple Salsa: Combine pineapple, bell pepper, red onion, cilantro, lime juice, and salt. Let sit for 10 minutes.
- Cook Chicken: Sear marinated chicken over medium-high heat for 5-6 minutes per side, until cooked through. Rest for 5 minutes before slicing.
- Warm Tortillas: Warm tortillas in a dry skillet or oven until pliable.
- Assemble Tacos: Fill tortillas with sliced chicken, salsa, and crema. Garnish with cilantro.
- Plate & Garnish: Arrange tacos and drizzle with crema. Garnish with pineapple, cilantro, and radish slices (optional). Serve with lime wedges.
Notes
For best results, use high-quality corn tortillas and fresh ingredients. Marinating the chicken longer enhances the flavor.
