Ingredients

  • 2 teaspoons Olive Oil
  • 6 Boneless Skinless Chicken Breasts
  • 2 Large Eggs
  • 2 cups Plain Panko Bread Crumbs
  • 3 Tablespoons Ranch Seasoning Mix
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Shredded Sharp Cheddar Cheese
  • ยฝ cup Grated Parmesan Cheese

Instructions

  1. Step 1: Preheat oven to 425ยฐF and coat a baking dish with 2 tsp olive oil.
  2. Step 2: Pound 6 chicken breasts to about ยผ-inch thick.
  3. Step 3: Whisk 2 eggs in a bowl.
  4. Step 4: In another bowl, mix 2 cups panko breadcrumbs, 3 Tbsp ranch seasoning, 1 tsp salt, 1 tsp pepper, 1 cup shredded cheddar cheese, and ยฝ cup grated Parmesan cheese.
  5. Step 5: Dip each chicken breast into the eggs, then coat in the breadcrumb mixture.
  6. Step 6: Place in the prepared baking dish.
  7. Step 7: Bake for 25โ€“30 minutes, until internal temperature reaches 165ยฐF and tops are golden.

Notes

Refrigerate the leftover chicken in an airtight container for up to 5 days. The chicken coating will get soft when refrigerated. You can make the coating crispy again by baking or air frying the leftover chicken when reheating.
