- 2 teaspoons Olive Oil
- 6 Boneless Skinless Chicken Breasts
- 2 Large Eggs
- 2 cups Plain Panko Bread Crumbs
- 3 Tablespoons Ranch Seasoning Mix
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Shredded Sharp Cheddar Cheese
- ยฝ cup Grated Parmesan Cheese
Instructions
- Step 1: Preheat oven to 425ยฐF and coat a baking dish with 2 tsp olive oil.
- Step 2: Pound 6 chicken breasts to about ยผ-inch thick.
- Step 3: Whisk 2 eggs in a bowl.
- Step 4: In another bowl, mix 2 cups panko breadcrumbs, 3 Tbsp ranch seasoning, 1 tsp salt, 1 tsp pepper, 1 cup shredded cheddar cheese, and ยฝ cup grated Parmesan cheese.
- Step 5: Dip each chicken breast into the eggs, then coat in the breadcrumb mixture.
- Step 6: Place in the prepared baking dish.
- Step 7: Bake for 25โ30 minutes, until internal temperature reaches 165ยฐF and tops are golden.
- Step 8: Rest for 10 minutes, then serve.
Notes
Refrigerate the leftover chicken in an airtight container for up to 5 days. The chicken coating will get soft when refrigerated. You can make the coating crispy again by baking or air frying the leftover chicken when reheating.
