  • 150g (5.3oz) Sharp Cheddar Cheese, shredded
  • 100g (3.5oz) Cream Cheese, softened
  • 100g (3.5oz) Smoked Turkey Strips, chopped
  • 1 Small Onion, thinly sliced
  • 1 tbsp (15ml) Olive Oil
  • 1 tbsp (15g) Brown Sugar
  • 1 tsp (5g) Smoked Paprika
  • 2 tbsp (30g) Unsalted Butter, melted
  • 2 tbsp (30g) Fresh Chives, chopped
  • 1 Clove Garlic, minced
  • 1 tbsp (15ml) Fresh Lemon Juice
  • 2 tbsp (30g) Plain Greek Yogurt (for drizzle)
  • 1 Large Egg, beaten (for egg wash)
  • Salt and Pepper to taste

Instructions

  1. Prepare Oven & Sheet: Preheat oven to 200ยฐC (390ยฐF) and line a baking sheet with parchment paper.
  2. Caramelize Onions: Sautรฉ sliced onion in olive oil with salt for 12-15 minutes until golden and soft.
  3. Enhance Onion Flavor: Stir in brown sugar and smoked paprika during the last 2 minutes, then drizzle with melted butter.
  4. Make Savory Filling: Combine cheddar, turkey, and half of the caramelized onions; season with salt and pepper.
  5. Prepare Cream Cheese Swirl: Mix cream cheese, garlic, lemon juice, chives, and smoked paprika.
  6. Roll & Cut Pastry: Roll puff pastry to smooth creases and cut into 4×4 inch squares.
  7. Assemble Turnovers: Fill each square with cheddar-turkey mixture, cream cheese, and remaining onions.
  8. Fold & Seal: Fold diagonally into triangles, pressing edges to seal and crimp with a fork.
  9. Egg Wash & Bake: Brush with egg wash and bake for 15-18 minutes until golden brown.
