Description

These Buffalo Ranch Chicken Stuffed Sweet Potatoes combine the flavors of buffalo wings and creamy ranch with tender chicken, all loaded into baked sweet potatoes for a comforting and easy meal.


Ingredients

  • 4 medium sweet potatoes (300g/10.5oz each)
  • 2 Tbsp (30ml) olive oil
  • 1 tsp (5g) kosher salt
  • 500g (1.1lb) boneless skinless chicken breast, diced
  • 1 Tbsp (15ml) vegetable oil
  • 1 tsp (5g) smoked paprika
  • 0.5 tsp (2.5g) garlic powder
  • 0.5 tsp (2.5g) onion powder
  • 0.25 tsp (1g) black pepper
  • 60ml (1/4 cup) buffalo sauce
  • 30g (2 Tbsp) melted butter
  • 0.5 cup (120ml) ranch dressing
  • 30g (2 Tbsp) crumbled feta cheese
  • 2 Tbsp (30g) chopped chives
  • 1 tsp (5ml) lime juice

Instructions

  1. Prepare Sweet Potatoes: Preheat oven to 200ยฐC (400ยฐF). Rub sweet potatoes with olive oil and salt.
  2. Bake Sweet Potatoes: Bake for 45-50 minutes, until tender. Cool slightly before slicing.
  3. Sautรฉ Chicken: Heat oil, sautรฉ diced chicken with seasonings until cooked through.
  4. Make Buffalo Ranch Sauce: Stir in melted butter and buffalo sauce into chicken.
  5. Combine with Ranch: Fold in ranch dressing until evenly coated.
  6. Stuff & Garnish: Slice potatoes, fluff insides, fill with chicken mixture, and garnish with feta, chives, and lime juice.
  7. Plate & Serve: Arrange on a platter and serve.

Notes

For crispy skin, bake sweet potatoes directly on the oven rack. Adjust buffalo sauce amount to control spice level.
