  • 30g American Cheese Slice, Torn: Classic Big Mac cheese.
  • 30ml Mayonnaise: Creamy base for the special sauce.
  • 15ml Ketchup: Adds sweetness and tang.
  • 5ml Yellow Mustard: Contributes a subtle tang.
  • 2g Onion Powder: Enhances savory flavor.
  • 2g Garlic Powder: Adds pungent aroma.
  • 1g White Sugar: Balances acidity.
  • 1g Salt: Essential seasoning.
  • 2 Large Corn Tortillas (≈8cm diameter): The taco vessel.
  • 10ml Vegetable Shortening: To crisp up the tortillas.
  • Fresh Cilantro Leaf: Vibrant garnish.
  • 5ml Lime Juice (Optional): Brightens the flavors.

Instructions

  1. Prepare Special Sauce: Combine mayonnaise, ketchup, mustard, relish, onion powder, garlic powder, sugar, and salt; refrigerate for 10 minutes.
  2. Heat Skillet: Heat a skillet over medium-high heat; add vegetable oil.
  3. Smash Patties: Divide beef, form into balls, smash to 1cm thickness; season with salt.
  4. Sear & Melt: Sear patties for 45 seconds, flip, add cheese, cook 30 seconds.
  5. Rest Patties: Let patties rest for 2 minutes.
  6. Crisp Tortillas: Brush tortillas with shortening; cook 30 seconds per side.
  7. Assemble Taco: Spread sauce on tortilla, add patty, lettuce, onion, and pickles.
  8. Finish & Serve: Drizzle with sauce, sprinkle with sesame seeds, garnish with cilantro.

Notes

For best results, use 80% lean ground beef and a hot skillet to achieve a crispy sear on the patties. Resting the patties allows the juices to redistribute, resulting in a more tender burger.
